A New Pie Design for Autumn

I made this apple pie for dessert on a blustery autumn Sunday. The willow leaves are hand cut with a scalpel and together with the small beech leaves and acorns are scattered on a tightly woven background. I was asked recently why I did not show oak leaves with the acorns, but oak leaves do not fall off of the trees in the fall. They fall first in springtime just before the new leaves appear. My autumn pies are usually based on the leaves that adorn the ground at this time of year. We have many willow trees in our back yard so I featured those on this pie.

I’m very fascinated by the patterns of the top pie crusts you’ve created and I say you’re a real artist.
I am curious to know which recipe among those on your site have you used for “new pie design for Autumn “? Because that is very neat and sharp on the edges and without slightest crack. I am about to try an herringbone lattice which that’s perfect for my aim. Thanks. Soraya.

Thank you for your kind words. The “new pie design for Autumn” was a simple apple pie. The apples must be cut very thin to make a smooth upper layer. The form must not be overfilled. I use tart apples, brown sugar, cinnamon, nutmeg, allspice, flour and butter for the filling. Hope your herringbone lattice turned out well.

Can I ask which one of your pie crust recipe you used for that pie? Flaky pie crust recipe or the other one prepared with cream cheese?
I send you a pic of the pie I baked with your flaky pie crust recipe but it didn’t turn out like your “autumn “; the edges melted and lost the sharpness. What do you think was the problem? Thank you so much ?. Your posts are awesome.

Thank you for your kind words and birthday greetings. I apologize for not seeing this earlier. I don’t seem to be getting any announcements when comments are made. For my decorative pies I only use the Flaky pie crust recipe. I could not find your picture of the pie, but it sounds like you did not cool it enough before baking. You must put it in the refrigerator for at least 2 hours before baking. I hope this helps.
