Apple Pancakes
Every once in awhile we like to enjoy a special breakfast, whether Eggs Benedict, French toast, waffles or some gorgeous fluffy pancakes. These simple, but delicious apple pancakes are always welcome.
Makes two portions or 6 to 8 pancakes
Ingredients
Ghee, butterfat or butter for the pan
130 g (1 cup) pastry or AP flour
I/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1 tsp sugar
250 ml (1 cup) buttermilk
1 egg
36 g (2 Tbl) butter
1 or 2 apples, cored and sliced thickly
Method
Sieve the dry ingredients together. Beat the egg in a mug or small bowl and stir in the buttermilk. Melt the butter in a small pan or microwave. Add the egg and buttermilk mixture to the dry ingredients and beat for a few seconds or until the dry ingredients are incorporated. Mix in the melted butter. Allow to rest for 30 minutes if time allows.
Melt the ghee, butterfat or butter in a large skillet or griddle. When hot enough that a drop of water dances across the surface ladle about 1/2 cup of the batter onto the hot surface. Quickly place a slice of apple on the middle of the batter and press in lightly. Once bubble begin to appear on the surface of the pancake flip it over and fry for about 2 minutes. Place on warmed plates and continue making pancakes until the batter is used up. Serve with butter, maple syrup, blueberries or any other fruit. Serve piping hot.
